"I'll have everything, please."

That was the popular order during Monday's Late Night Pancake Breakfast at the University of Wisconsin-Parkside. "Everything" in this case meant scrambled eggs, hash brown potatoes, and pancakes hot off the griddle.

Students started lining up for the free meal intended to fortify them for finals well before the 9 p.m. opening. By 9:05, the Brickstone Grill and Eatery was hopping with a stress-busting combination of good food and good company. Student Center Interim Director Stephanie Sirovatka-Marshall estimated "well over" 550 students were served during the two-hour repast.

Under the watchful eye of Chef Joseph Minneci, Dennis Casey and Dean Yohnk worked the pancake production line. Yohnk said turning batter into breakfast brought back his days in summer stock.

"I think every theatre arts student has worked in a restaurant either as a cook or as a server," he said.

Wading into the throng of socializing students, Chancellor Debbie Ford returned breathless to the serving station.

"I just was part of my first flash mob," Ford reported, referring to a dance that coalesced in the dining area. "I can take that off my bucket list."

The flood of famished students thinned to a trickle as the evening progressed toward the 11 p.m. closing time with a few stragglers and students returning for seconds passing by the serving stations. The breakfast received uniformly great reviews from those being served.

"This is great!" was heard from a number of students reviewing both the food and the Brickstone's festive atmosphere.

In addition to Chancellor Ford, Dean Yohnk, Dennis Casey, and Stephanie Sirovatka-Marshall, the Late Night Pancake Breakfast was a success thanks to the efforts of Terry Brown, John Jaraczewski, Scott Menke, Tom Bottoms, George Holman, Amy Piekarski, Cindy Graham, Dave Buchanan, David Diaz, Jim McPhaul, Kim White, Ana Guerriero, Marie Smith, Peppy O'Neill, Roxane Kriederman, Sabrina Morgan, Sandra Leicht, Sarah Raidbard, Steve Basty, Steve Wallner, and Gary Dreyer. The university also thanks the Sodexo staff of Ashley Fought, Daniel Lidester, Lisa Wagner and Chef Joe Minneci. Sodexo sponsored the meal.
