Dr. Hicks’ MODL 191 French Culture class examines French culture, history, and the geography, through the lens of French cuisine. Students in Thursday’s class explored cheesemaking, reporting on their assigned region and cheese, before getting a taste. The class discussed how the environment, as well as the methods for making the cheese, affect the taste. Gruyère, Comté, Roquefort, Brie, Camembert, Port-Salut, and others were discussed.
